In caviar, as in other fine products, quality is not an accident. AmStur (for “American Sturgeon”), a closely held family business based in California, supplies caviar from farm-raised North American white sturgeon that is the equal of the best caviars in the world. Renowned for its exquisite flavor, consistency, and perfectly balanced look and taste, AmStur caviar is the preferred brand of acclaimed chefs in the finest international restaurants, as well as discerning consumers who appreciate the highest quality, personalized delivery, and excellent customer service.

AmStur was founded by the Narsavidze family from the small country of Georgia in Eastern Europe, home to more than half a dozen species of sturgeon. The family supplied caviar and other fine foods to dining tables across the region, until the early 1990s.

The family resettled in Northern California, where they soon discovered to their great surprise that the region was home to one of the world’s oldest and largest species of sturgeon, Acipenser transmontanus (white sturgeon), which produced a caviar comparable to the finest caviars from the Black and Caspian Seas.

The Narsavidzes dedicated themselves to cultivating this amazing product, and AmStur was born. The company has risen to international prominence through its championing of North American premium caviar and has earned a deserved reputation as one of the leading caviar suppliers in the world.

Hailing from the “farm-to-table” capital of the world in Northern California, AmStur prides itself on being part of the movement that champions a direct relationship between food producers and consumers. Its status as a direct distributor distinguishes it from many caviar companies, which may have multiple layers between them and their end users. By delivering the world’s finest caviar directly to the chef or individual consumer, AmStur not only ensures that the product is properly handled and is as fresh as possible, but forges a personal relationship with caviar connoisseurs throughout the world.

People have been eating and enjoying caviar since at least the 13th century and it has grown to become a favorite delicacy for millions around the world. While the regions where caviar was produced have changed over time, perhaps no area is more important to raise sturgeon than their native waters. Today, AmStur is proud to carry on this long tradition, supplying the finest New World caviar to enthusiasts around the globe.

With strong “farm-to-table” principles at the heart of all AmStur operations, the company opened its first international distribution facility in the United Arab Emirates (UAE) in February 2015. Research had indicated that the country’s historically high rate of caviar consumption and deep cultural appreciation for the product made it an opportune target market for our premium-quality white sturgeon caviar.

In its operations in Dubai, as elsewhere, AmStur not only holds the requisite local licenses and certifications, but is in full compliance with the strictures of the Convention on International Trade in Endangered Species (CITES), which has banned the exportation of any wild-caught sturgeon caviar.

As a result, most of the world’s caviar no longer comes from wild-caught sturgeon in places such as Russia, the Caspian Sea, and the Black Sea region. This has caused severe volatility in caviar production and distribution networks, as various suppliers aggressively move to fill the gaps.

As an increasingly influential player in this new and radically different market, AmStur recognizes not only the great opportunity presented to us, but also our responsibilities. We strongly support the mission of CITES and will continue to do our part to promote the principles of environmental stewardship and sustainability.

Burj Al Arab Jumeirah joined forces with AmStur Caviar, the premiere US supplier of world-class caviar, to set the Guinness World Record for the largest tin of caviar ever created. The record took place at an elegant event held at Dubai’s most iconic hotel on 28th December.

The monumental tin, named “The Mashenomak” in honour of the “Great White Sturgeon” of Native American legend, was custom-made by AmStur for the occasion. It contained 17.89kg of deliciously flavourful, deep-grey Empress caviar, the world’s only fully certified organic caviar from native-raised sturgeon, which has been called “an organic culinary masterpiece.”

Lucky guests had the opportunity to partake in the world’s largest serving of caviar using custom-engraved mother-of-pearl spoons, produced to commemorate the occasion.
