Fish roe is an excellent source of key vitamins, minerals and other nutrients that have proven benefits for health and well-being. One tablespoon of caviar contains a gram of omega-3 fatty acids, which help prevent heart disease, lower inflammation, and improve mental functioning.

Caviar also supplies significant amounts of calcium, phosphorus, iron, and magnesium; vitamins A, B2, B6, B12, and D; and four essential amino acids that the body requires for optimal performance.

AmStur caviar contains NO preservatives. While other producers commonly add boric acid (e284) and/or sodium tetraborate (e285) to their caviar in order to prevent spoilage, we use only a small amount of refined salt (<4%) to keep our caviar in its pristine state. Together with our ultra-efficient vacuum-sealing, this eliminates the need for extra additives. Preservatives not only can impair taste, but can have negative health effects. That’s why we keep our product pure and preservative-free.

Caviar is very delicate and if mishandled, it can spoil the flavor and texture of one of the world's most reknowned delicacies. To assist you in properly storing and enjoying fresh caviar at home, please consider the following guidelines:

 - Keep caviar stored at temperatures between -2°C to 0°C at all times; this can be achieved using gel-ice packs;
 - For best taste and texture, fresh caviar should be consumed within 3 to 5 hours of opening the tin;
 - Once opened:
           - Avoid excess exposure to air.
           - Keep the lid closed when not eating;
           - Do not reseal for long-term storage.

Each order will be delivered with high-capacity gel-ice packs which can be refrozen and swapped every 48 hours. Sandwiching the caviar in between two gel-ice packs in a common household refrigerator is a great way to ensure that the caviar is kept in an ideal temperature range to preserve freshness and texture.

Orders throughout the UAE are hand delivered within 48 hours by specially trained AmStur ‘caviar chauffeurs’ in refrigerated vehicles and portable refrigeration devices . Orders cut-off time is 20:00 (8pm).

Overfishing, pollution and habitat destruction have all taken a toll on wild fish populations. Today only 25 species of sturgeon remain in the world. Aquaculture provides a healthy, sustainable alternative that enables producers to raise sturgeon and harvest roe with minimal impact on the environment.

Sturgeon are highly sensitive to even the smallest changes in their living conditions which can have dramatic repercussions on the flavor, taste and quality of caviar and fish meat. Therefore, based on long experience, it has been determined that the best-tasting caviar comes from sturgeon raised in their native habitat (or 'native-raised'). This uncompromising commitment to regional production respects the individual species and allows us to offer the finest caviar available.

For AmStur, that native habitat is the west coast of North America, home to the legendary white sturgeon (lat. Acipenser Transmontanus). The white sturgeon is the largest freshwater fish in North America, and the third largest of Sturgeon in the world. To date, the oldest sturgeon ever caught on record was a white sturgeon aged between 125-130 years old. In the wild, depending on location, the white sturgeon grows slowly maturing only after eight to twenty years, reaching lengths over 6.6 meters, and sometimes weighing over 1 metric ton.

They produce 100,000 to four million eggs per spawning, but they spawn only once every two to eight years. They produce one of the most favorable caviars in the world in terms of flavor and texture. Both in California and Canadian farms have received “Best Choice” recommendations from Seafood Watch, a highly regarded U.S. program that helps consumers and businesses choose seafood that's fished or farmed in ways that protect sea life and habitats.
