Caviar also supplies significant amounts of calcium, phosphorus, iron, and magnesium; vitamins A, B2, B6, B12, and D; and four essential amino acids that the body requires for optimal performance.
AmStur caviar contains NO preservatives. While other producers commonly add boric acid (e284) and/or sodium tetraborate (e285) to their caviar in order to prevent spoilage, we use only a small amount of refined salt (<4%) to keep our caviar in its pristine state. Together with our ultra-efficient vacuum-sealing, this eliminates the need for extra additives. Preservatives not only can impair taste, but can have negative health effects. That’s why we keep our product pure and preservative-free.
- Keep caviar stored at temperatures between -2°C to 0°C at all times; this can be achieved using gel-ice packs;
- For best taste and texture, fresh caviar should be consumed within 3 to 5 hours of opening the tin;
- Once opened:
- Avoid excess exposure to air.
- Keep the lid closed when not eating;
- Do not reseal for long-term storage.
Each order will be delivered with high-capacity gel-ice packs which can be refrozen and swapped every 48 hours. Sandwiching the caviar in between two gel-ice packs in a common household refrigerator is a great way to ensure that the caviar is kept in an ideal temperature range to preserve freshness and texture.

Sturgeon are highly sensitive to even the smallest changes in their living conditions which can have dramatic repercussions on the flavor, taste and quality of caviar and fish meat. Therefore, based on long experience, it has been determined that the best-tasting caviar comes from sturgeon raised in their native habitat (or 'native-raised'). For AmStur, that native habitat is the west coast of North America, home to the legendary white sturgeon (lat. Acipenser Transmontanus). The white sturgeon is the largest freshwater fish in North America, and the third largest of Sturgeon in the world. To date, the oldest sturgeon ever caught on record was a white sturgeon aged between 125-130 years old. In the wild, depending on location, the white sturgeon grows slowly maturing only after eight to twenty years, reaching lengths over 6.6 meters, and sometimes weighing over 1 metric ton.
They produce 100,000 to four million eggs per spawning, but they spawn only once every two to eight years. They produce one of the most favorable caviars in the world in terms of flavor and texture.
