Gilles Arzur grew up in a small seaside community in Brittany, where he began cooking at an early age and went on to train in the classic French culinary tradition. Following hotel school in Brest, France, he was working in a pastry kitchen when he was tapped by renowned chef Paul Bocuse to open a restaurant in Moscow. He then held three executive chef positions with Sofitel Luxury Hotels and Resorts before joining the Four Seasons group in 2008, serving as executive chef at their Bora Bora resort and the Beverly Wilshire Hotel in Beverly Hills, CA before his Dubai appointment in 2014.
