South African national Carmine Pecoraro was strongly influenced by his father – who grew his own vegetables and had a passion for cooking – in his decision to pursue a career in fine cuisine. Trained at Damelin, South Africa, Carmine has more than 15 years experience in the luxury hotel industry in Europe and the Middle East, including serving as chef de cuisine, an executive sous chef for Jumeirah Hotels & Resorts, and most recently as executive sous chef for the one and only Emirates Palace. With a comprehensive knowledge of international cuisine, Carmine brings pleasure to hundreds of people every day.
